List of Ingredients
3 pounds ground sturgeon
2 1/2 C milk
1 T potato flour
mace
salt
pepperRecipe
Grind sturgeon, then beat in beater and add milk a little at a time. Then add flour, mace, salt and pepper.
Cut 1/4 pound salt pork fine and boil in 2 quarts water. Add sturgeon balls. Boil 20 minutes and serve with white sauce.
You can also make cake instead of balls and fry in butter and make a gravy. Cook cakes in gravy 20 minutes.
Gravy;
Brown 2 tablespoons butter in fry pan until brown. Add 2 tablespoons hard wheat flour and blend. Add water enough to make sauce consistency.
