    20 pounds fresh raw salmon
    1/2 pound sugar
    2 1/2 pounds rock salt

    Recipe



    Clean fish and remove backbone. Slice slice fish to desired portions and add 1/2 pound sugar. rub into fish well. Let stand overnight. Add 2 1/2 pounds rock salt and let stand for 5 days.
    Serve on hardtack or rye bread.If served on hardtack, should be eaten immediately.
