Cut a medium sized turnip into half and then into quarters like an apple. Peel and slice into triangular pieces about half an inch thick. Boil gently in salted water until tender but not mushy. Drain well.
Prepare a batter with a breakfast cupful of flour, half a teaspoon of salt, 1 egg yolk and 2 cupfuls of milk. Beat out all lumps. dip the turnip slices in batter and fry in deep fat until golden brown.
