Chipotle Cornbread Pudding

2 1/2 T melted butter
3 C cubed stale cornbread
1 lrg onion, sliced
1 lrg red bell pepper, thinly sliced
1 tsp oregano
1 tsp salt
2-4 chipotle in adobo sauce,chopped with sauce (to taste).
4 eggs
1 pint half and half
1/4 C whipping cream
Recipe
Use 1 tablespoon butter to grease an 8x8 inch pan. Place cornbread in pan.
In saute pan, slowly cook onions, bell pepper, oregano and salt for 20 minutes or until very soft and caramelized. spread over cornbread.
Heat oven to 350 degrees F.
Whisk together eggs, half and half and cream. Let set fifteen minutes. Pour over cornbread.
Bake 40 minutes.
