Cucumbers, ginger, rice vinegar and mint

2 1/2 pounds cucumbers, chopped
1 1/2 teaspoons kosher salt
1/2 cup rice vinegar
1 1/2 teaspoons fresh ginger, minced
2 garlic cloves, minced
1/4 teaspoon dried crushed red pepper
1/4 cup loosely packed fresh mint leaves, chopped
Freshly ground black pepperRecipe
Toss together cucumbers and salt in a large bowl, and let stand 5 minutes. Whisk together vinegar and next 3 ingredients. Pour over cucumber mixture; cover and chill 1 to 24 hours. Add mint, and toss to combine. Let stand 10 minutes before serving. Season with salt and pepper.
