    Potato pudding

    Preheat oven to 350 degrees F.

    List of Ingredients

    Paste; make a recipe for pie crust. roll it out thin and flake on to it one quarter pound of butter. Fold over and roll out again, flake on another quarter pound of butter, fold and roll. Fold again with out butter and roll out thin.

    Recipe

    Take a pound and a half of well mashed potatoes, while still warm and put three quarters of a pound of butter, six beaten eggs and three quarters pound sugar. Mix well and add five ounces brandy. season with nutmeg or mace.
    Bake in a paste; line a baking dish with the paste and fill with the pudding and bake for 45 minutes or until well set.
    Var: you can add lemon zest to the potatoes if desired. (or extract).
