    Soup, Barley Mushroom

    List of Ingredients


    • 1/2 C organic pearled barley, rinsed
    • 15 ounces Eden organic lentil or garbanzo beans, drained
    • 1 package Eden ****ake mushrooms, (25 grams)
    • 1/2 C onion diced
    • 1/4 C celery, diced
    • 1/4 C carrot, diced
    • 1/2 C green peas, fresh or frozen
    • 2 cloves garlic, minced
    • 1 tsp ground bay leaves, or 2 leaves
    • 2 T Eden shoyu soy sauce(to taste)
    • 1/4 tsp freshly ground black pepper (to taste)
    • 5 C water, including ****ake soaking water


    Instructions


    1. Soak ****ake in 2 cups hot water for 20 minutes,remove stems and discard. Slice mushroom caps. Reserve liquid. Place the barley, water, soaking water,onions, mushrooms and garlic in a soup pot. Cover and bring to a boil. Simmer for 20 minutes.Add all remaining ingredients except the scallions. cover and simmer another 10 minutes. Serve and garnish with scallion.
