List of Ingredients
1 1/2 pounds bacon or ham
2 large onion, chopped
1 large clove garlic, minced
1 stalk celery, chopped
1 handful parsley, chopped
2 C peeled and chopped tomatoes
1 T fresh, chopped basil
1 tsp sweet basil
1 tsp oregano
1 potato, cubed
1/2 of a small savoy or Napa cabbage, slice thinly
3 carrots, sliced or cubed
6 stalks carrots
large handful of spinach, chopped
large handful of green beans
Recipe
Cut the bacon or ham in small pieces and fry. Remove from pan Use the fat for frying. If there is not enough fat from the ham, finely dice salt pork and cook until fat is rendered. leave the pieces of salt pork in the pan and saute onion, garlic and celery. Reduce heat to medium and add parsley, tomatoes and herbs. Cook, stirring 10 minutes. Set aside.
In 2-3 quarts of water cook the remaining vegetables until done to your liking. Puree half of these vegetables and add back to the pot. Add the bacon or ham and sauteed ingredients to the pan. Add a cup of cooked rice if desired. Stir and reheat until heated through.
Serve on thin slices of well toasted french bread. Have ample grated parmigiano-reggiano on hand to sprinkle on each serving.
