Stew, Caribbean Chicken and Rice

List of Ingredients
- 1, 3 pound fryer ,cut up
- 2 tsp salt
- 1 tsp oregano
- 1/2 tsp coriander
- 1/4 tsp pepper
- 2 C water
- 1 (16 oz) can stewed tomatoes
- 1 onion, chopped
- 1 clove garlic, pressed
- 1 C raw rice
- 10 oz frozen peas
- 1 bell pepper, chopped
- 1/2 C ham, cubed
- 1/3 C pitted green olives
- 1 T capers, and 1 T caper liquid
- parmesan cheese
Instructions
- Boil chicken with salt, oregano, half tsp coriander, pepper, water, tomatoes with their liquid, onion and garlic. Reduce heat and simmer half an hour.
- Add rice, cover and simmer 20 minutes. Add peas, bell peppper, half cup ham,third cup olives, capers and caper liquid. Cover and simmer 5 minutes.
- Serve with cheese as garnish.
