    Stew, Caribbean Chicken and Rice

    List of Ingredients


    • 1, 3 pound fryer ,cut up
    • 2 tsp salt
    • 1 tsp oregano
    • 1/2 tsp coriander
    • 1/4 tsp pepper
    • 2 C water
    • 1 (16 oz) can stewed tomatoes
    • 1 onion, chopped
    • 1 clove garlic, pressed
    • 1 C raw rice
    • 10 oz frozen peas
    • 1 bell pepper, chopped
    • 1/2 C ham, cubed
    • 1/3 C pitted green olives
    • 1 T capers, and 1 T caper liquid
    • parmesan cheese


    Instructions


    1. Boil chicken with salt, oregano, half tsp coriander, pepper, water, tomatoes with their liquid, onion and garlic. Reduce heat and simmer half an hour.

    2. Add rice, cover and simmer 20 minutes. Add peas, bell peppper, half cup ham,third cup olives, capers and caper liquid. Cover and simmer 5 minutes.

    3. Serve with cheese as garnish.
