    Works with conch, abalone or snail.

    List of Ingredients




    1 onion, diced
    2 stalks celery, diced
    1 sweet pepper, diced
    1 T butter
    1 carrot, diced
    1 potato, diced
    4 T tomato paste
    2 ripe tomatoes, chopped
    10 oz conch, diced
    1 bay leaf
    1/2 tsp salt
    1/4 tsp pepper
    1 quart fish stock or clam juice

    Recipe



    saute onion, celery, and bell pepper in the butter. Add Rest of vegetables, tomato paste and conch. Add bay leaf, thyme, salt and pepper. Mix. Add stock or juice. Bring to a boil, reduce heat and simmer, covered, for 1 hour.
    Thicken with arrowroot if desired.
