Roux;
1/3 C flour
3 T butter
2 C chicken stock
1 pint milk
1/4 tsp salt
1/8 tsp pepper
Soup;
1 C chopped parsley
2 T butter
1/4 C finely chopped onion

Make a roux of the flour and 3 T butter by whisking the flour into the melted butter over medium heat. Watch that the flour does not scorch or the butter burn. When you have a whitish, bubbly mass, add the stock, milk, salt and pepper and continue whisking for 20-30 minutes.
Saute the parsley in the 2 T butter, then add to the soup. Garnish with nutmeg.
