Cream of Swiss Chard Soup

List of Ingredients
1 onion, chopped
3 T butter
1 pound Swiss chard,coarsely chopped
2 C chicken broth
1 C milk
1 tsp salt
1/4 tsp freshly ground black pepper
4 T sour cream
2 scallions, chopped

Saute onion in butter. Add chard, cover and reduce heat, simmer 10 minutes. Puree in blender until smooth. Return to pan. Add broth, milk, salt and pepper.Stir well. Serve hot or chilled, garnish with 1 Tablespoon sour cream, scallion and paprika.
Note; the recipe doesn't call for it but I use stems and all. It adds a sweetness.
