Soup, Dandelion and Greens

List of Ingredients
- 1 pound dandelion leaves
- 1 pound swiss chard or kale (or greens of choice)
- 1/2 tsp salt
- 4 C boiling water
- 4 3/4 inch slices of stale italian bread, well toasted
- 1 clove garlic, sliced
- 1 T olive oil
- Grated parmesan cheese
Instructions
- Cook greens like spinach, steamed in water left on leaves after washing. you will have to do this in batches of 4. Cook a few minutes with lid on, then add more leaves by lifting the cooked ones and placing new ones under them. add salt, cover and cook on medium heat for 15 minutes all told.
- Add 4 cups boiling water, cook 1/2 hour.
- Rub bread with garlic and place each in a bowl. when greens are tender, add olive oil, stir and ladel over bread in bowls. Sprinkle with cheese.
Final Comments
Other greens you can use; Collard greens, escarole, spinach,rape greens, mustard greens or turnip greens.
