    Recipe Introduction

    You can use a variety of greens, dandelion, Dock, plantain, a little sheep sorrel or oxalis.

    List of Ingredients

    12 C water or broth
    2 ham hocks
    2 large russets
    1 red onion
    4 small red potatoes
    1 large clove garlic
    1 1/2 tsp salt
    pepper
    4-6 C finely sliced kale or chard

    Recipe

    Cook the hocks in the water until meat falls from bone. Reduce the water to 1/3. and cook the russets until they disappear. Then add the onion, chopped and 4 small red potatoes cut in 1/8s, garlic, salt and pepper. Add greens and cook 20 minutes or so with the meat from the chopped up ham hocks. Add juice of 1 lime and remove from heat.
