Gumbo

Fourth corner, left coast.
List of Ingredients
2 inch cube salt pork, diced
1/4 C + 2 T olive oil
1/4 C celery chopped
1/2 C onion, chopped
1 garlic clove, minced
1/4 C bell pepper, chopped
1/2 c sliced okra
1 pound rock fish or halibut (cod)in 1 inch cubes
1/4 C rice
1 (15 oz) can diced tomatoes
1 1/2 pt fish stock
1/2-1 T gumbo file
salt to taste
pepper to taste
1/4 tsp paprika
1/4 C flour
dash sherry
Recipe
Combine tomatoes, fish stock and rice. Bring to a simmer. Saute onions, bell pepper, garlic and celery in the 1/4 cup olive oil.
Render salt pork in 2 tablespoons olive oil and make a roux.Combine mixtures and add pepper,and paprika.
Simmer, covered, until rice is done, (40 minutes), Add sherry, okra, gumbo file and fish. Warm but do not boil just until fish is firm.
