    List of Ingredients


    • 1/2 C pearl barley
    • water
    • 6 lamb shanks
    • 2 T oil
    • 4 C water
    • 1 bay leaf
    • 2 tsp salt
    • 1/2 tsp thyme
    • 1/4 tsp pepper
    • 2 medium onions, sliced
    • 3 stalks celery in 1/2 inch slices
    • 6 carrots in 1/2 inch slices
    • 2 T capers


    Instructions


    1. Cover barley with water and soak. Brown lamb shanks in oil. Add 4 cups water and bay leaf. bring to a boil. simmer 2 1/2 hours. Cool. Skim off fat.

    2. Bone the meat and return meat to pot. Drain barley and add with seasonings, onion, celery, carrots and capers. Cook 1/2 hour.
