List of Ingredients
- 1/2 C pearl barley
- water
- 6 lamb shanks
- 2 T oil
- 4 C water
- 1 bay leaf
- 2 tsp salt
- 1/2 tsp thyme
- 1/4 tsp pepper
- 2 medium onions, sliced
- 3 stalks celery in 1/2 inch slices
- 6 carrots in 1/2 inch slices
- 2 T capers
Instructions
- Cover barley with water and soak. Brown lamb shanks in oil. Add 4 cups water and bay leaf. bring to a boil. simmer 2 1/2 hours. Cool. Skim off fat.
- Bone the meat and return meat to pot. Drain barley and add with seasonings, onion, celery, carrots and capers. Cook 1/2 hour.
