    Lentil and Mustard Greens Soup

    List of Ingredients




    1 onion
    1 T oil
    3 garlic cloves
    2 C chicken broth (or vegetable)
    6 C water
    1 pound lentils
    1 tsp salt
    1 pound mustard greens
    salt to taste
    black pepper to taste

    Recipe



    Peel and chop the onions.
    Add oil to a stock pot over medium heat. Cook the onions in the pot for about 5 minutes, stirring. Add garlic and cook 1 minute. Add broth, water, salt and lentils. Bring to a boil, then reduce to a simmer over low heat until lentils are tender, about 15 minutes. Add the greens, cover and cook for 10 more minutes. Adjust seasonings.
    Serve with a good crusty bread.
