Chowder, Baby Lima Bean

3 1/3 C cooked baby Lima beans, plus reserved liquid
2 oz salt pork, cubed
1/2 C chopped onion
2 T butter
2 T flour
2 16oz cans minced clams
1 1/2 C milk
1 1/2 C half and half
Cayenne pepper
salt
1/2 C sliced scallions
Recipe
Cook Lima beans according to package directions.Drain and reserve cooking liquid. Puree the Lima beans, adding enough water to bring the liquid to 1 1/2 cups of liquid.
Fry salt pork until lightly browned. Remove and reserve salt pork. Saute chopped onions in the same pan. Add butter and blend flour in. Drain clams and save liquid in measuring cup, add water to make 1 cup. Stir the clams , broth, milk, half and half and dash cayenne to the onion mixture. Cook and stir until thickened. Add bean puree and the salt pork. heat through but do not boil. Serve with scallions on top and oyster crackers.
