Minestrone

List of Ingredients
2 C fava beans
1 bay leaf
1/2 C mung beans
1/2 C adzuki beans
salt pork
1 T olive oil
1 C diced onion
4 cloves garlic, pressed
1 lrg carrot, diced
Sm handful of fettuccine noodles,broken into 2 inch pieces
Meat cut from 8 short ribs
2 stalks celery, diced
1 celery leaf, minced fine
1 C cubed potato
1 C shredded cabbage
1 small bell pepper, diced
1 C broccoli florets
2 C diced tomatoes
2 T minced parsley
1 tsp basil
1/2 tsp thyme
1/4 tsp red pepper flakes
Recipe
Pre-soak the fava beans overnight. Add Spices. Cook in water to cover until almost tender. Meanwhile cut two, 1/4 inch slices, down the thinest edge of the salt pork. Dice it into 1/4 inch pieces. Fry the salt pork in skillet until browned. Remove the meat from the pan and set aside. Add the olive oil to the same pan and saute onion and garlic in it. Remove from pan and add to the salt pork. Cut the meat into cubes. Brown the meat.
Once beans are tender firm, add the adzuki and mung beans. cook until tender. Add carrots and pasta. cook 10 minutes. Add remaining ingredients. Cook 15 minutes.
