1/4 pound roughly chopped meaty bacon
1 1/2 C yellow peas
2 qts water
heaping tsp dried thyme
Recipe
Rinse and soak the peas overnight. Drain.
fry up the bacon, drain and discard fat.
Bring the peas in the 2 quarts water to a boil. Add thyme. Reduce heat and simmer, partially covered with a lid for 2 1/2-3 hours. Puree or mash the peas.
Serve hot with chopped parsley and the bacon as a garnish.
