Succotash, Pennsylvania Dutch

Recipe Introduction
This version of succotash is similar to the early Plymouth or Massachusetts version, except it lacks the fowl, corned beef and salt pork.
Shaker dried corn or green corn cut from the cob will most likely not be available to most and is only included for authenticity of the recipe. Yellow or white, cooked corn, cut fresh from the cob, or canned or frozen corn will work.
List of Ingredients
1/2 C Shaker dried corn (or 1 C green corn)
1 pint green lima beans
1 pint stewed tomatoes
1 1/2 C potatoes, diced
1 bell pepper, minced
2 onions, diced
2 Tbl butter or bacon fat
1 tsp brown sugar
Recipe
Melt fat, saute onions, bell pepper, corn and limas. Cook 1 minute. Add potatoes and 1 quart water. Cook until tender. Stir in tomatoes, sugar, 1 1/2 tsp salt and 1/4 tsp pepper. Serve with dumplings
