Porcupine Meat Balls 2

Makes 8 porcupines
List of Ingredients
1 pound ground beef
1/2 C cooked rice
1 tsp salt
1/8 tsp pepper
1 small onion, sliced
1/2 bell pepper, sliced
1 T shortening
2 1/2 C tomato juice
dash nutmeg
salt and pepper to tasteRecipe
Combine ground beef, rice salt and pepper. Form into small balls about 1 1/2 inches in diameter. Place in a baking dish. In a skillet brown onions and bell pepper in shortening. Add tomato juice, nutmeg, salt and pepper to taste. Pour over meatballs. Cover baking dish. Bake in 350 degree oven about 1 hour, or until rice is very tender.
