    Chili, Pork

    List of Ingredients

    1 pound beans
    1 1/2 pounds pork shoulder, cut in bite size pieces
    2 bay leaves
    1 onion, chopped
    2 cloves garlic, minced
    3 medium Anaheim chilies, roast, peel and chop
    1/2 tsp cardamom
    1/2 tsp red chili powder
    pinch cinnamon
    1 T baking cocoa powder
    1 tsp coriander
    1 tsp cumin
    1 tsp oregano
    2 T corn meal


    Recipe

    Soak the beans. Cook beans with water to cover.
    Saute the pork in a little oil and remove to a dish. Add the bay leaves to the pork drippings. Saute the onion, garlic and Anaheim chili. Reduce heat and add rest on ingredients. Combine with the pork and mix well. Set aside until beans are almost done.
    When beans are almost tender add the combined ingredients and cook until beans are done and all is hot. Adjust seasonings and add salt to taste. Serve in large bowls topped with a dollop of sour cream, cubed avocado and minced cilantro if desired.
