    Cuban okra stew


    Recipe Introduction


    Serves 4


    List of Ingredients


    • 1 onion, finely chopped
    • 1 small green pepper, finely chopped
    • 4 tomatoes, chopped
    • 1 clove garlic, finely minced
    • 1 T oil
    • 1/4 pound cooked, cubed ham
    • 1 C chicken broth
    • bay leaf
    • salt and pepper to taste
    • 1 pound okra, trimmed and sliced in 1/2 inch rounds
    • 1 T lemon juice
    • 1 green plantain


    Instructions


    1. Prepare plantain balls. Peel the plantain. Slice into 1/4 inch pieces. Cook in unsalted water for 20 minutes or until soft. Mash smooth. Add 1/2 tsp salt. Form into balls.
    2. Fry onion, bell pepper, tomatoes and garlic in oil. Add ham, broth, bay leaf, salt and pepper to taste. Cook slowly for 10 minutes.
    3. Add okra, cook 20 minutes, or until tender. drop plantain balls into stew, cook covered for 5 minutes. stir in lemon and serve on rice.
