Cuban okra stew
Recipe Introduction
Serves 4
List of Ingredients
- 1 onion, finely chopped
- 1 small green pepper, finely chopped
- 4 tomatoes, chopped
- 1 clove garlic, finely minced
- 1 T oil
- 1/4 pound cooked, cubed ham
- 1 C chicken broth
- bay leaf
- salt and pepper to taste
- 1 pound okra, trimmed and sliced in 1/2 inch rounds
- 1 T lemon juice
- 1 green plantain
Instructions
- Prepare plantain balls. Peel the plantain. Slice into 1/4 inch pieces. Cook in unsalted water for 20 minutes or until soft. Mash smooth. Add 1/2 tsp salt. Form into balls.
- Fry onion, bell pepper, tomatoes and garlic in oil. Add ham, broth, bay leaf, salt and pepper to taste. Cook slowly for 10 minutes.
- Add okra, cook 20 minutes, or until tender. drop plantain balls into stew, cook covered for 5 minutes. stir in lemon and serve on rice.
