    Red Kidney Bean Stew

    List of Ingredients




    2 C red kidney beans
    water to cover by one half inch
    5 sprigs parsley
    1 roasted Anaheim chili, chopped
    sm. can mushrooms
    2 sausages, cooked and sliced thin
    1/2 C chopped onion
    1 elephant garlic
    2 tsp beef bouillon
    1/2 C cooked rice
    1 C chopped cabbage
    1 carrot, sliced
    3/4 C sliced celery
    Paprika quarters, cut in thin strips,(jarred)

    Pick through the beans. rinse them and soak overnight. Drain. Add new water and cook the beans about 1 and 1/4 hours, or until tender.If there is a lot of liquid in the pan pour or dip some off and reserve. Add remaining ingredients and cook 15 minutes more or until very tender, adding the reserved liquid (or not) as required. Thicken the stew if desired with cornstarch or arrowroot.
