    Recipe Introduction

    This recipe is flexable, add or subtract anything and replace it with something else. Ideas; your favorite fish in chunks, or shellfish, calamari, conch, abalone, etc....

    List of Ingredients

    1 /16 pound salt pork, finely diced (2-3 T)
    1/4 C chopped onion
    1/2 C chopped celery
    1 C water
    2 medium potatoes
    salt
    pepper
    3-4 parsley sprigs, chopped
    1 can evaporated milk, undiluted
    1 bottle clam juice
    1 C small clams
    1/2 C whole oysters
    1/2 C mussels

    Recipe

    Saute salt pork until crisp. Save 1 tablespoon fat in pan. Saute onions. Add celery, water, potatoes, salt and pepper. Simmer until potatoes are tender. reduce heat to low and add rest of ingredients. Let cool 15 minutes before serving. Serve with oyster crackers or pilot crackers.

    Var; you can use 2 T crumbled bacon in place of salt pork if desired, use 1 potato and a pinch of paprika. Also, reserve the liquids from seafood if canned and replace the water with it.
