    3 1/2 C lentils
    1 large can chicken broth
    6 C water
    3 large onions, finely chopped
    4 large carrots, finely chopped
    1 tsp thyme
    3 pounds ham hocks
    Rye Toast
    Sour cream
    Sunflower seeds
    Mint leaves

    Recipe



    In stock pot, add lentils, broth, water, carrots, onions, thyme and hocks. Bring to a boil, reduce heat, cover and simmer until lentils are falling apart (1 1/2 hrs), stirring occasionally.
    Remove hocks, cool, bone and cut up meat in small pieces. return the meat to the soup.
    Serve with the condiments.
