    Stew, Spicy Lamb and Black Bean

    List of Ingredients

    1/2 pound lamb, cut in 3/4 inch cubes
    1/2 C sliced scallions
    1 clove garlic, minced
    1 10oz can tomatoes and green chilies
    1 8oz can tomato sauce
    1 15oz can black beans, rinsed
    1 medium zucchini, cut in 1/2 lengthwise and sliced
    1/4 tsp black pepper
    1/8 tsp cayenne
    1 1/3 C hot cooked rice

    Recipe

    Saute lamb, scallions and garlic 5-8 minutes. Add rest of ingredients except rice. Cover and simmer10-15 minutes.
    Spoon into soup plates and place a scoop of hot rice in the center of each plate.
