    List of Ingredients


    • 2 T butter
    • 6 scallions with tops, minced
    • 1/2 C shredded leafy lettuce
    • 1 C shredded spinach
    • 1/2 C chopped watercress
    • 1/2 tsp dried chervil
    • 2 tsp sugar (optional)
    • 6 C chicken broth
    • salt and pepper to taste
    • 1 C light cream


    Instructions


    1. Saute scallion. add next four ingredients and simmer, covered for ten minutes.

    2. Add sugar, broth, salt and pepper and simmer, covered for one half hour.

    3. Add cream and just heat through.
