List of Ingredients
1 lb cooked garbanzos
2 lb lamb, cubed
1 T olive oil
2 T butter
3/4 C onion, diced
2 tsp salt
pepper to taste
2 T tomato paste
2 knuckle bones
3 C cubed potatoes
2 C cubed squash
2 C sliced zucchini
1 pound couscous (or kasha, bulger or barley)
2 T orange flower water
1/4 tsp cinnamon
1/8 tsp cloves
2 hard boiled eggs for garnish
Recipe
If using couscous, cook it separately from the stew. Cook all except the hard boiled egg for 45 minutes. Steam the couscous according to the package direction, About 15 minutes. Arrange the grain in a mound in the center of the soup plate, along with the stew ingredients piled all over it, and add some stock to the soup plate.Garnish with chopped egg.
