Recipe Introduction
This makes a large stockpot of soup.
List of Ingredients
3-15 oz cans cannillini beans
3-15 oz cans great northern beans
3 T olive oil
1 onion
1 large red bell pepper
1 T rubbed sage
1 large clove garlic
1-28 oz can fire roasted tomatoes
1-28 oz can diced tomatoes
2 vegetable bouillon cubes
4 C water
2 T salt
2 tsp black pepper
1/8 tsp cayenne pepper
Recipe
Chop onion roughly in food processor. Heat oil in large stock pot and cook onion in the oil while chopping red bell pepper. Pulse the pepper 8-10 bursts. saute with the onion and sage. Add water and bouillon, the cannillini beans and 2 of the cans of great northern beans with the liquid from the cans, the tomatoes, salt, pepper and cayenne.
In blender, blend the 1 can of great northern beans with the liquid in the can, the garlic and 2 cups of the soup from the pot. Puree and add to the soup. Bring the temperature up to 165 degrees F. Adjust seasonings.
