    Wild Rice Soup with Sherry

    Makes 5 cups.

    List of Ingredients




    6 T butter
    1 T minced onion
    1/2 C all-purpose flour
    3 C chicken broth
    2 C cooked wild rice
    1/2 tsp salt
    1 C half and half
    2 T dry sherry
    snipped parsley
    snipped chives

    Recipe



    Saute onions in butter, blend in flour and gradually stir in broth. Cook, stirring constantly, to a full boil for 1 minute. Add rice and salt. Simmer 5 minutes. remove from the heat. Blend in the half and half and sherry. Return to heat to just reheat.
    Garnish with parsley and chives.
