Preheat oven to 400 degrees F.


List of Ingredients




1 1/4 C cracklins, from rendering lard
2 C cornmeal
1 1/2 tsp baking powder
1/2 tsp baking soda
2 eggs , well beaten
1 C buttermilk
1/4 C lard, melted

Recipe



Finely chop the cracklins and combine with the cornmeal, baking powder and baking soda. Blend thoroughly. Add buttermilk and lard to the eggs. Mix thoroughly and stir into the cornmeal mixture.
Turn out into a greased 11x7x1 1/2 inch baking pan. Bake at 400 for 25-30 minutes.
