    Crawdad Jambalaya

    List of Ingredients

    1 C cooked long grain rice
    3 T bacon fat
    1 clove garlic
    3 C stock
    1 C Spanish onion, diced
    1 bell pepper, diced
    3 tomatoes, diced
    thyme to taste, chopped
    cayenne pepper to taste
    1/2 pound crawdad
    1 tsp salt
    1/8 tsp saffron Saute the garlic, onion

    Recipe

    Saute the garlic, onion, and bell pepper in the fat. Add the stock, salt and cayenne. Cook for 7-8 minutes. Add tomatoes and cook 2 minutes. Add the crawdads,saffron and cooked rice and cook until the crawdads are done 5-7 minutes.

    You can add sausages if you prefer, or some chorizo.
