2 cups dried red cow peas
1/4 pound salt pork
2 cups cooked rice
salt
pepper
2 tablespoons butter

Soak peas overnight. Cook with salt pork until peas are tender, being careful to keep them whole. There should be only a small quantity of liquid left. Add rice and season with salt, pepper and butter. Cover and simmer 15 minutes. serve with bread and butter. Serves 8-10.
