    Single crust pie

    List of Ingredients




    pastry for a 9 inch pie
    1 T unflavored gelatin
    1/2 C cold water
    4 egg yolks, slightly beaten
    2/3 C sugar
    2 tsp grated lime peel
    1/2 C key lime juice (about 6)
    1/4 tsp salt
    4 egg whites
    1/2 C sugar

    Recipe



    Bake the pie shell and set aside.
    Soften the gelatin in the cold water. Mix next 5 ingredients in the top of a double boiler. Set over simmering water and cook, stirring constantly,until slightly thickened.
    Remove from water and stir in gelatin, stir to dissolve. Cool until slightly thickened.
    Beat egg whites until frothy. Add the sugar, gradually beating well after each addition. Beat to stiff peaks. Spread over gelatin mixture and fold together.
    Turn into pie shell and chill several hours.
