    Serves 4

    List of Ingredients




    2 C beef bouillon
    1 carrot, pared and chopped
    1 stalk celery, chopped
    1 sm onion, chopped
    1/4 C butter
    2 T flour
    1 pint milk
    1/3 C grated cheese

    Recipe



    Bring to a boil, the bouillon, carrot, celery, and onion. Reduce heat and simmer, covered for half an hour, or until tender. Strain. Set aside. the stock.
    Heat the butter in a saucepan. Blend in the flour, heat until mixture bubbles. Remove from heat.
    Gradually add the milk, stirring constantly.
    Combine strained stock with the white sauce. Simmer covered, until flavors blend. (20 minutes)
    When ready to serve, stir in the grated cheese.
