4 eggs
pinch salt
2 C sugar
1/2 C fresh lemon juice
1/4 C butter, room temperature
2 T grated lemon rindRecipe
Beat eggs, add salt, butter, lemon juice and rind. Blend well. Cook in top of double boiler for 1/2 hour, stirring occasionally, until thickened and smooth. Store in fridge.
Serve as a spread or tart filling, etc....
