    2 C scraped raw fish
    1 C butter
    4 eggs, separated
    2 T flour
    2 tsp sugar
    3 C light cream
    1 T cornstarch
    salt
    pepper

    Recipe



    Grind fish very fine. Put in a bowl and knead until smooth and creamy, gradually blending in the butter. Beat egg yolks and add. Add cream and dry ingredients, beating mixture thoroughly. Fold in stiffly beaten egg whites. Pour into a buttered mold. Set in a pan of hot water and bake 1-1 1/2 hours in moderate oven.
