Flesk Pankaker-(pork pancakes)

Recipe Introduction
I use a cast iron skillet, it produces a crispier pork.
You can also use bacon, bits of pork or smoked pork in place of salt pork.
List of Ingredients
2 eggs, separated
2 C milk
1/4 pound salt pork
1 1/2 C flour
1/4 tsp saltRecipe
Beat egg yolks, add milk, flour and salt. Beat until smooth. Beat egg whites stiffly and fold in. Dice pork and fry until light brown. Pour batter over pork and bake about 45 minutes at 375 degrees F. Serve hot with butter and marmalade.
