Kalvadans-(veal loaf)

List of Ingredients
3 pound veal
1 large onion, diced
1 C diced celery
2 tsp salt
4 bay leaves
8 whole allspice
pepper
1/3 C butterRecipe
Wash meat and cover with cold water to which has been added the salt. Let come to a boil, skim. Add seasonings, onion and celery. Simmer until meat is tender. Remove meat and cut into small pieces (or it may be ground).
Strain stock into another pan and boil down to about 1 pint. In a mold, arrange slices of stuffed olives or pimiento and pour enough stock on to cover. Let stand until cool.
Add softened butter and rest of stock to veal, seasoning to taste. Mix well. Pour into mold and chill until firm. Unmold and garnish with slices of hard boiled eggs. Serve with pickled beats.
