6 quarts milk
1 1/2 rennet tablets
1/2 C flour
4 eggs
2 C cream
1 C sugar
1 tsp almond or vanilla extract
Recipe
Dissolve rennet in a little cold water. Heat milk until slightly warmer than lukewarm
Make a paste of the flour and a little milk and add to milk for thickening. Add the dissolved rennet and stir until mixed. Let stand until it separates, about 45 minutes,then strain through colander. Drain off whey and turn cheese into a baking dish. Beat eggs well and add rest of ingredients, mix well and stir carefully into cheese. Bake in a slow oven for about 2 hours. Just before removing from oven sprinkle a little cream and sugar on top and brown a few minutes at a higher temperature. Serve cold with fruit, thickened fruit juice or lingonberries and cream. When the ost kaka is to be served as a side dish, decrease sugar.
