2 1/2 pounds pork butt, ground
1 1/2 pounds beef, ground
6 raw potatoes
1 C milk, scalded, or beef broth
1 onion
1 tsp pepper
2 T salt
3/4 tsp allspice
2 tsp ginger
1 pound casings
Recipe
Grind potatoes and onion. Combine with the ground meat. Add spices and milk and mix thoroughly.
Cut casings in 24 inch lengths. Tie one end and fill with sausage mixture. Allow room for expansion so casings do not break during cooking. Then tie other end. Place sausages in brine for 24 hours.
Prick in several places before cooking. Boil slowly 45 minutes.
