Grate a small pudding basin full of stale bread crumbs (1-1 1/2 cups) and fry in 2 ounces butter. Peel and core 2 pounds of apples and stew with a cupful of sugar until reduced to a pulp. Grease a tin or shape, scatter with crumbs over the sides and then fill with alternate layers of fried crumbs and and stewed apple, beginning and ending with crumbs. Put a few dabs of butter on top, place in a moderate oven and bake for half an hour. Turn out when cold, sprinkle with sugar and serve with vanilla-flavoured , thin custard or top milk.
