    1/2 pound almonds, blanched and chopped
    1 C sugar
    1 tsp grated lemon rind
    3 egg whites
    2/3 tsp cinnamon

    Recipe



    Blanch almonds, slip skins then dry in moderate oven. Put through food chopper. Beat egg whites until stiff. Add sugar gradually. Fold in ground almonds, lemon rind and cinnamon. Drop by teaspoonful onto greased cookie sheet. Bake about 15 minutes in slow oven. When cool store in tightly covered jar. These cookies will keep a long time, and will improve in flavor.
