    Asparagus with Shallot Marmalade

    2 T olive oil
    1 C minced shallots
    1 tsp whole grain Dijon mustard
    2 tsp soy sauce
    1 tsp balsamic vinegar
    1 lb asparagus

    Recipe



    Heat the oil in a medium saute pan over medium heat until hot. Add the shallots and cook, stirring often, until golden brown, 7-8 minutes. Add the mustard, soy sauce and vinegar. Remove from heat.

    Steam the trimmed asparagus until bright green, tender and crisp, 2-3 minutes. Serve drizzled with the shallot marmalade.
