    Brussel sprouts for prime rib recipe

    using the amount of Brussel sprouts desired according to amount of guests serving, melt a little bacon fat and roll them in it. Let excess drain off (or it will be overbearing in the au jus). Cook them in one end of the roasting pan that you are cooking the prime rib in, so they do not mix with the potatoes (or other vegetables used). Plan on placing them in the roaster 45-60 minutes before the prime rib is done. You can also season the brussel sprouts with a little oregano and add a small handful of lightly chopped hazelnuts if desired. To serve, scoop the brussel sprouts into a serving bowl, separate from the potatoes and other vegetables.
