Recipe Introduction
One pound of carrots is 2-3 large, 5-6 medium, or 6-8 small. One pound is 3 C chopped, diced or sliced, or 2 1/2 C shredded. There are 33-40 baby carrots in a pound.
List of Ingredients
10 large carrots
3 T butter
2 C bread crumbs
1 small onion
2 C rich milk
salt
pepper
2 eggs, separated
Recipe
Cook the carrots almost to a mush. Work the bread to a fine crumb. Grate the onion. Stiffly beat egg whites
Mash the drained carrots, add butter, crumbs, onion, milk, seasonings and egg yolks. Fold in egg whites. Pour into a buttered baking dish and bake 350 degrees for 1 hour or until loaf is firm in center.
