Collard Greens And Bacon

List of Ingredients
1/2 onion, chopped
1-2 garlic cloves, minced
2 T bacon fat
6-7 parsley sprigs, minced
1-2 bunches collard greens
1/2 pound cooked bacon ends and pieces or ham hock, cubed
1 (15.5 oz)can black eyed peas with liquid
1/4 tsp red pepper flakes, or to tasteRecipe
Prep the onions, garlic etc.... Saute in bacon fat until onion is transparent and soft. Remove from heat.
Remove thick stems from greens. Cut the collards into bite size pieces. Place in a 1 1/2 quart microwave safe dish. Microwave for 10 minutes with 1 C water. Drain.
Add all ingredients together and microwave 2-3 minutes to reheat.
Serve using a slotted spoon if desired, or serve with biscuits to sop up juices. (or crusty rustic bread.)
