four cups grated raw potatoes
one cup ground raw onion
salt to taste
pepper to taste
one and one half cups cream
three quarters cup grated, well aged, cheese (a combo of asiago, fontina, Parmesan and mild provolone)
Recipe
Grate the potatoes and place in a colander or sieve. Rinse with cold water. Drain thoroughly. Mix with onion, salt and pepper. Sprinkle with grated cheese.
cover and bake at three hundred and fifty degrees, forty five minutes. Remove cover and bake fifteen minutes to brown cheese.
VAR; Bacon or smoked salmon in moderation.
